GF/CF Blueberry Scones

Looking for a healthier option to Blueberry Scones. These are easy to make an requires mostly pantry staples.

Blueberry Scones

  • 3 cups almond flour

  • 2 ¼ cups arrowroot flour

  • 7 ½ tsps baking powder

  • 1 tsp salt

  • 1 cup coconut oil

  • 1 tsp vanilla

  • ¾ cup maple syrup

  • ¼ cup water

  • 9 tbs boiling water (4.5 oz)

  • 3 tbs ground flax

  • 2 cups fresh blueberries

Heat oven 450 degrees.  Mix boiling water and flax together, let sit to congeal.  Mix dry ingredients.  Melt coconut oil.  Mix together wet and dry ingredients.  Drop dough by spoonfuls onto parchment papered cookie sheet about 1 inch apart.  Bake until golden brown, 10-12 minutes.
