GF/CF Cobbler!
Today I get to write a guess post about one of my favorite things in the world: food! Unfortunately, Dr. Jerry did this horrible thing where he told me all the foods I used to love I couldn’t have anymore thanks to my allergies (okay, maybe not ALL of the foods, but most of them). My problem is, I still love food and I love to cook, so I’ve had to become very creative in making foods without all the “bad” stuff. Here’s a great cobbler recipe I’ve put together, we just had this at Mom’s birthday and it turned out great! Now, the recipe calls for canned peaches, but I’ve used it with frozen berries and fresh pineapple too, so use whatever fruit you like!
Crust
1/3 cup coconut oil
2 cups almond flour
2 tbs sugar
3 tsps baking powder
1/2 tsp salt
1/4 cup almond milk
Fruit
3 cans of peaches, drained (get the ones without the icky corn syrup!)
2 tsp of cinnamon (use Viennese cinnamon if you can, it’s got a much richer flavor than normal cinnamon)
1/2 cup brown sugar
1. Drain the peaches and mix them together with the brown sugar and cinnamon in a 9 x 9 glass baking dish.
2. Mix all the dry ingredients together.
3. Slowly add the almond milk and mix with a fork or pastry cutter. You want to have a biscuit dough consistency, or something pretty close to that.
4. Put a sheet of wax paper on the counter and put the crust on it. Put another sheet of wax paper on top and squish it out until it’s about 1/4 of an inch thick and roughly 9 x 9.
5. Now, here’s the tricky part. Gently remove the top sheet of wax paper. It should pretty much peel right off. Now, take the bottom sheet of wax paper with the crust on in and gently flip it onto the fruit in the 9×9 baking dish. Don’t worry if this doesn’t quite go perfectly! Remove the wax paper, taking any of the crust that sticks on it and use it to plug any holes in the crust.
6. Bake at 350 for about 45 minutes, but keep an eye on the top, you don’t want the crust to burn!
Wait for it to cool and then enjoy!
